Raw carrot oat cake

240 Premium nut mix
270 Dates, pitted and softened in water for around 2 hours
100 Thin-cut oats
180 Carrots, peeled and grated
3 tbsp. Brown almond butter
2 Tsp. Cinnamon
1 Tsp. Vanilla aroma
1 Pinch Salt
60 ml Plant-drink
3 tbsp. White almond butter
150 Vegan cream cheese alternative
2 tbsp. Maple syrup
0 Juice from half a lemon
1 Tsp. Zest from 1 organic lemon
0 Brazil nuts, chopped
  • Step 1/5

    First, grind the nut mixture and oats in a blender and set aside.

  • Step 2/5

    Drain the soaked dates from the water, squeeze them out a little if necessary, and purée them in a blender until you get a homogeneous mass.

    Add the ground nut mix and oats from step 1, grated carrots, almond butter, cinnamon, vanilla aroma, salt and plant drink to the dates in the blender and purée everything into a creamy mixture.

    Pour the mixture into a suitable mould or bowl.

  • Step 5/5

    Mix the remaining ingredients to make a frosting and spread over the mixture. Chill in the refrigerator for at least 2 hours and then garnish with chopped pecan nuts.
