Unlike in Canada, in Germany you can buy mostly grade A and grade C, explains our managing director Piran in his Maple syrup video. Basically, the younger the maple syrup, the lighter and milder. Light maple syrup, like the one offered here, is extracted in the first two weeks of the harvest period and is called Grade A. It is characterized by its mild sweetness. It is characterized by its mild-sweet aroma and typical amber color. Grade C maple syrup refers to a much darker maple syrup that is harvested later. This is stronger in flavor and tends to be more of a reddish brown in color. Ultimately, the grades are therefore a matter of taste.
