How long does it take to bake a protein bread?

The total baking time varies between 45 and 55 minutes, depending on the shape of the tin or baking tray used. It’s really easy to make: simply knead 300g of the mix with 280ml of water for about 5 minutes to form a smooth dough, then shape it into a loaf. After that, it’s up to you how much time you have. If you leave the dough to prove at 35°C for 35 to 45 minutes, bake it in a preheated oven at 220°C (top and bottom heat) for 10 minutes, then finish baking it at 170°C. If you’re in a hurry, place the loaf straight into a non-preheated oven without leaving it to prove, and use the same temperature settings.
