Vegetable coconut curry with peanut butter

Curry with vegetables and quinoa or rice.

1 UNIT Carrot
330 ml Chicken broth or vegetable broth
1 UNIT Broccoli
1 UNIT Onion
1 Shot Öl
0 as necessary Curry powder, pepper, salt (for seasoning)
100 ml Currypaste
6 UNIT Garlic cloves
4 UNIT Chili
150 Quinoa or rice
1 UNIT Paprika
1 UNIT Zucchini
2 UNIT Ginger
1 tbsp. Peanut butter
330 ml Coconutmilch

  • Step 1/5

    Chop garlic, ginger and chili and saute lightly.

  • Step 2/5

    Add chopped onions and curry paste and sauté until hot.

  • Step 3/5

    Add vegetables according to desired cooking time or consistency.

  • Step 4/5

    Deglaze with coconut milk and vegetable broth.

  • Step 5/5

    Add the juice of one lime and season as needed. Add the peanut butter. Simmer gently until the garnish is ready.
