Azuki bean salad

Tired of leaf salad? Then try this Mediterranean bean salad!

100 g Azuki beans
1 glass Oliven
1 Tsp. Salt
0 to taste Basil
3 Tomaten
100 g Feta
1 Tsp. Savory
1 Pinch Pepper
1 tbsp. Lemon juice
  • Step 1/6

    Soak azuki beans in a liter of water overnight.

  • Step 2/6

    The next day, drain the water and boil the beans with 1.5 liters of water for about 40 minutes.

  • Step 3/6

    Dice the feta and tomato. Cut the olives into slices.

  • Step 4/6

    Mix olive oil, lemon juice, salt, pepper and savory in a small bowl until well blended.

  • Step 5/6

    Drain the beans and put them in a large bowl. Leave to cool a little.

  • Step 6/6

    Then add the remaining ingredients, mix well and garnish with basil.
