Vegan blondies

Delicious, vegan and without refined sugar: Blondies made with white beans, peanut butter, Medjool dates, maple syrup, baking powder, rice protein and vanilla flavoring.

200 g Medjool dates
60 g Peanut butter
70 g Maple syrup
2 Tsp. Baking powder
600 g white beans
60 g Rice protein
1 Tsp. Vanilla flavoring
  • Step 1/7

    Pit dates and soak in hot water for about 2 hours. Drain beans well.

  • Step 2/7

    Drain dates and also drain well.

  • Step 3/7

    Preheat oven to 175 °C.

  • Step 4/7

    Place all ingredients except the baking powder in a bowl and blend well to make a relatively firm, creamy mixture.

  • Step 5/7

    Stir in baking powder and pour the mixture into a mold.

  • Step 6/7

    Top with nuts or chocolate drops as desired.

  • Step 7/7

    Place blondies in oven and bake for about 20-25 minutes. Let cool well.
