Cheese Leak Mince Soup With Tortelloni – quick and tasty homemade recipe with pantry staples.

Ingredients for
1 UNIT
1 small onion, chopped
3 UNIT
2-3 cloves of garlic, finely chopped
2 UNIT
2 narrow leeks, halved lengthwise, cut into rings and washed
120 g
120 g sour cream (alternatively crème fraiche)
80 g
80 g grated cheese, e.g. mountain cheese, cheddar 20 g finely grated Parmesan cheese Some nutmeg e.g. mountain cheese, cheddar

20 g finely grated Parmesan
1 some
A little nutmeg
1 some
Pepper
1 some
Salt
1 handful
fresh parsley, chopped
1 handful
fresh dill, chopped

Fresh lemon juice

Step 1/6

Sauté the vegan mince in a large pan in a little oil.

Step 2/6

Add the onions and garlic and fry until translucent. Then add the leek and fry until translucent and golden brown.

Step 3/6

Pour in the vegetable stock, then add the mustard, nutmeg, salt and pepper. Bring everything to the boil. Add the tortelloni, cover and simmer over a medium heat for about 12 minutes (until the tortelloni is cooked).

Step 4/6

Turn off the heat and then stir in the cheddar and sour cream.

Step 5/6

Finally, carefully stir in the Parmesan (this should be stirred in at a low temperature and very finely grated in small pieces so that it does not clump in the soup).

Step 6/6

Top with fresh herbs, lemon juice and optionally more sour cream.
