Lentils are naturally gluten-free. However, cross-contamination with gluten may occur during the bottling process, as our bottler also processes foods containing gluten. For this reason, we do not label our yellow lentils as gluten-free.
Since they are already peeled, you do not need to soak the yellow lentils. However, we recommend rinsing the peeled legumes with hot water before cooking. Then add about twice the amount of fresh water to a pot and cook the yellow lentils in it until the desired consistency is reached. The cooking time of yellow lentils is usually 10 to 15 minutes. Since our yellow lentils are smaller pieces of lentils, the cooking time is less. Exactly how long the yellow lentils should cook depends on how you plan to use the legumes. For a lentil salad or as a side dish with bite, a shorter cooking time is recommended accordingly. In addition, you can cook the lentils in this case with salt, then they become less soft.
Yes, yellow lentils have a high protein content with 25 g per 100 g. Thus, the lentils can contribute to muscle building.

The yellow lentils keep unopened for at least 2 years after packaging. The shelf life of yellow lentils depends essentially on the correct storage - cool and dry. If the dried lentils have expired, this is not a reason to throw them away blindly. The best-before date (BBD) should not be confused with the use-by date. It simply indicates the minimum period until which the characteristics of a food product, such as taste, odor, color, consistency and nutritional value, remain unchanged. We always recommend a visual inspection and, if necessary, an odor and taste test before consumption.

If yellow lentils are too tart for you, or if you simply don't have any in your pantry, it's best to replace yellow lentils with sweet red lentils. Since both types of lentils are peeled lentils, they have very similar cooking properties. On the other hand, those who prefer a stronger flavor and more bite will find firm-cooking mountain lentils a good alternative to soft-cooking yellow lentils.

It's great that the yellow lentils come in a bulk pack, I grind them into flour and make wraps or pasta from them. But the little yellow protein bombs are also great cooked in salads, sauces or soups. A must-have in my kitchen!
