They are the perfect portion of Inca power in savoury dishes but also sweet treats. Preparing amaranth is super easy: the tiny grains are very thirsty. Similar to quinoa or millet, you cook it with three times the amount of water: first boil the water, then add the amaranth grains and simmer for about 20 to 30 minutes. Where does amaranth come from?

The amaranth plant originated in Central and South America and has been a staple food there for several thousand years. How did the golden Aztec treasure come to us? During the expansion of corn cultivation, it snuck aboard ships bound for Europe as a stowaway and eventually made its way onto our plates. But many of the more than 40 different species of the foxtail plant are also at home in Asia. Of course, it is also their good reputation that has made them indispensable for us. Over the years, amaranth has become so well established that it may even be possible to grow it in Germany, in your own garden. Our amaranth comes from India, where it feels most comfortable due to the climate – of course from 100% organic cultivation.
